Also, I recently made these vegan pumpkin chocolate-chip cookies that Gracious Hospitality wrote about. Oh, la la! Very very tasty. And they freeze well. I eat them right from the freezer. I used whole wheat flour. I actually used honey, which is not vegan. I used a little less than the called-for sugar amount. If you wanted to avoid white sugar, agave nectar would work nicely as a vegan sweetener.
I've never had a treat with both pumpkin and chocolate, but that sounds like a perfectly delightful combination! And I'm so glad you enjoyed the April Fool's post. One always holds one's breath when doing such things ... !

The pumpkin chocolate-chip cookies sound yummy and I like treats that can be stashed in the freezer and enjoyed for an impromptu tea party or whenever.
ReplyDeleteYum --- I'm so glad you posted the pumpkin cookies! I think honey would be a great sweetener and would add a nice flavor. My sweetener of choice is maple syrup, which lends itself to this recipe as well. I've taken to reducing the maple syrup and adding a tsp or two of NuNaturals Stevia --- delicious!
