Orange Oolong Crepe


Orange Oolong Crepe:  a fun, unique and delicious dessert for anyone who likes to make crepes.  I think this would be a great thing to make at a party.  I had this yesterday at the NW Tea FestIn hindsight, it was perhaps not the best choice for lunch (very sweet), but how could I not try it?  ;-)  The crepe maker was very kind to answer all my questions. 

First, he poured the very thin crepe batter onto the griddle and spread it paper-thin with a special tool. (I use a cast iron crepe pan at home.) 

He let is set and then sprinkled on sugar, which he caramelized with a torch. 

 Then he added the fresh juice of half an orange.

 He sprinkled on the dry oolong tea leaf and let the crepe cook a little longer.

Done and delicious!  It had a crunchy texture from the caramelized sugar and tea leaf, and a tangy-sweet flavor.  Some of the sugars, now warmed and combined with the citrus, melted into a delicious syrup.
I think I will try to recreate this, though I will leave off the caramelized sugar.  As much as I have a sweet tooth, it was a bit too much for me.  Instead, I will use a nut filler (maybe walnut?).  I think the rest is good.  What do you think?

  1. I never met a grain of sugar I didn't like (alas), so this would have been just fine by me! But I would be happy to try your suggested version as well. Just let me know what time to show up! ;)

  2. It sounds delicious! I like the idea of adding nuts --- chopped almonds, or hazelnuts, or walnuts perhaps? Maybe a little bit of fresh orange zest --- and served with just a splash of pure maple syrup. Oh, and for sure the oolong tea leaves! This sounds terrific!

  3. I think you'd do better with a milder nut - almonds or pinenuts so they don't overwhelm the Oolong.

  5. When I saw this post I had to laugh. I did the same thing as I was so curious. It was good, but overwhelmingly sweet. I could have gone with just the sugar sprinkled on the top a little and yes, maybe a fine sprinkle of almond would be good.

  8. If I would have been there I'd have tried the Orange Oolong Crepe too. It sounds wonderfully unique and delicious - sugar and all! ;-)

  9. To tell you the truth I really hate sugary foods but I will put this one as an exception. Do you have a recipe using a tulsi tea or the one they call holy basil and turn it into a delicious crepe too. :-) Thanks

  10. Hanna - I don't have a recipe using holy basil, but I think if you sprinkled on some dry leaf, it would work well!
